Organic wines from the Paardeberg


The Observatory farm, known as Boschgaasfontein (tanslation: Tanglewood Springs), is worked biodynamically in its entirety (70 hectares, of which 20 are covered by vineyard). To control ground cover and preserve structure in the granite soils, we graze our herd of cows in the vineyards from after harvest until budburst in spring. They in turn help energise the soils, as they eat the diverse plants and indigenous herbs growing in the vinyard. This process is reinforced with biodynamic preparations and fermentations based on various native herbs.

Observatory wines are made with minimum intervention and without the addition of commercial yeasts or tartaric acid. This produces more complex wines that convey truly a sense of the terroir, showing ripe clean flavours and natural freshness.
